Jim Shapter, RDN, LDN, CDCES

Jim founded One Bite at a Time Nutrition to create a warm and welcoming nutrition practice where clients with diverse nutrition needs would feel understood and supported. Starting his career at a renowned residential treatment center, Jim served clients with eating disorders, mental health issues, and those struggling with addiction. In addition to One Bite at a Time Nutrition, Jim also serves as a Registered Dietitian for Marathon Health. Jim has years of extensive experience working with children, adolescents, and adults on numerous nutrition needs. He also specializes in nutrition therapy for eating disorders, diabetes, PCOS, and other endocrine disorders. In addition, he regularly helps clients with food allergies, gastrointestinal disorders, cardiac health improvement, and general wellness. Jim is a member of the Tampa Chapter of the International Association or Earring Disorders Professionals (IAEDP). He also leads a weekly eating disorder in-person support group for the National Alliance for Eating Disorders.

Jim is a registered and licensed dietitian. He received a Bachelor of Science in Nutrition and Food Science from Middle Tennessee State University. He completed his clinical training at Vanderbilt University Medical Center, one of the most distinguished nutrition programs in the country. He has also worked for Johns Hopkins All Children’s Hospital as a Registered Dietitian and Certified Diabetes Educator (CDE).

In his free time, Jim is a chocolatier, makes his own bean-to-bar chocolate, and spends a lot of his time in the kitchen. He and his wife, Marisa, enjoy all things outdoors, traveling, and exploring everything the wonderful city of St. Pete has to offer.
